Bean Goulash

Ingredients

  • 1 onion chopped (frozen and pre chopped is quickest)

  • 400g tinned plum tomatoes 

  • 400g harricot beans (or any bean of choice)

  • 400g kidney beans - drained and rinsed

  • 2 cloves of garlic - peeled and chopped finely (lazy garlic is fine if time is short)

  • 2 tbsp of olive or rapeseed oil

  • 2 carrots - peeled and sliced

  • 2 tsp of paprika (smoked paprika will add a warming taste)

  • 1 tsp marmite

  • 1 vegetable stock

  • 1 tsp of honey

Method

  1. Drain and rinse all beans in a colander

  2. Add the oil to the large pan, once hot, add the onion and saute for 4 minutes

  3. Lower the heat then add the garlic and paprika for 1 minute

  4. Add the tomatoes, marmite, crumbled stock cube and honey

  5. Half fill the empty tin of tomatoes with water and add to the pan 

  6. Simmer for 15 minutes 

  7. Add the rinsed beans and stir

  8. Simmer for 30 minutes or put into a slow cooker on low for roughly 8 hours (if using a slow cooker add twice as much water)
