Banana and Blueberry Muffins


300g Self raising flour

1 tsp Bicarbonate of Soda

50g Large rolled porridge oats

100g Light muscovado sugar

2 Bananas

250 ml Buttermilk

5 tbsp Olive oil

2 Egg whites

150g Blueberries


  1. Heat oven to 160c Fan/180c/Gas 4

  2. Place 12 paper muffin cases into a muffin tin

  3. Put the flour and bicarb into a large bowl

  4. Add the sugar, saving some to sprinkle on the top of the muffins and the oats to the flour

  5. Mix and make a well in the centre

  6. Mash the bananas in another bowl and stir in the buttermilk, egg whites and oil

  7. Pour the banana mix into the well and stir quickly with a wooden spoon, don't over mix

  8. Add the blueberries and stir gently

  9. Pour the mix into the cases and sprinkle on the sugar and some extra oats

  10. Bake for 20 minutes, cooling for 10 minutes before removing from the tin
