Turkey Casserole

1 onion, quartered

any veggies, leave the skin on and just roughly chop.

1/2 pint stock

1/2 tsp thyme

1 vegetable stock cube

salt and pepper to taste


  1. Heat olive oil in a large casserole dish and add the onions, cook for 5 minutes.

  2. Add in all of the veggies and cook for a further 5 minutes, adding the thyme for the last 30 secs.

  3. Add all remaining ingredients and bring to the boil.

  4. Place the lid on the casserole and place in a pre heated oven on 100c for 3 hours.

  5. Check and stir every hour and add more water if required.

  6. You can also put this into a slow cooker for 6 - 8 hours.
